About This Dish
Literally 'mozzarella in a carriage,' this Neapolitan classic wraps thick slabs of fresh mozzarella in crustless bread, dips them in egg, and fries them to a shattering golden shell.
Ingredients
- 250g fresh Mozzarella, sliced 1cm thick
- 8 slices white bread, crusts removed
- 2 eggs, beaten
- 100ml whole milk
- Plain flour for dusting
- Neutral oil for frying
- Marinara sauce for dipping

Build the sandwiches
Place thick mozzarella slices between two pieces of crustless bread. Press edges firmly to seal.

Prepare the coating
Whisk eggs and milk. Dust each sandwich in flour, then dip into the egg mixture on all sides.

Fry to golden
Heat oil to 175°C. Fry 2–3 minutes per side until deeply golden. Drain on a wire rack, season with salt.

Serve
Cut each diagonally to reveal the molten cheese pull. Serve with warm marinara sauce.
Chef's Tip
Oil temperature is critical. Too hot and the bread burns before cheese melts; too cool and it absorbs oil. Use a thermometer.
